Ingredients

  • 1 block (14 ounces) firm tofu, drained and crumbled
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

How to do it

  1. Heat the olive oil in a large skillet over medium heat. Add the crumbled tofu and cook for 3-4 minutes until lightly browned.
  2. Add the onion, bell pepper, and garlic and cook for another 5-7 minutes until the vegetables are tender.
  3. Add the turmeric, cumin, smoked paprika, salt, and pepper. Stir well to combine and cook for another 1-2 minutes until the spices are fragrant.
  4. Serve hot, garnished with chopped fresh parsley
