Ingredients
- 1 block (14 ounces) firm tofu, drained and crumbled
- 1 tablespoon olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish

How to do it
- Heat the olive oil in a large skillet over medium heat. Add the crumbled tofu and cook for 3-4 minutes until lightly browned.
- Add the onion, bell pepper, and garlic and cook for another 5-7 minutes until the vegetables are tender.
- Add the turmeric, cumin, smoked paprika, salt, and pepper. Stir well to combine and cook for another 1-2 minutes until the spices are fragrant.
- Serve hot, garnished with chopped fresh parsley
